Peanut Butter and Jelly Pancakes

Our family loves these pancakes, quickly becoming our favorite go-to. They are a perfect blend of fat, fiber, and protein to help manage sugar and avoid sugar spikes.

Makes 8 pancakes.

What you will need

For the pancakes:

1 cup buckwheat

1/2 cup gluten-free all-purpose flour

1 1/4 cups non-dairy milk (I like to use hazelnut milk)

2 tablespoons fresh lemon juice or vinegar to make buttermilk

4 tablespoons unsalted butter (or vegan)

1 tablespoon coconut sugar

3/4 tsp baking soda

1/2 tsp sea salt

For the toppings:

Smooth peanut butter (I like Costco’s because it has two ingredients, salt and peanuts), or you can make your own.

Frozen Mixed berries

Chia Seeds

Tapioca flour

Coconut sugar, honey, or pure monk fruit

1.) First, combine the milk and lemon/vinegar to create buttermilk; set it aside for approximately 5 minutes while you prepare the rest of the ingredients.

2.) Combine the buckwheat, gluten-free flour, sweetener, baking soda, and salt in a medium-sized bowl.

3.) Mix the egg and vanilla with the milk mixture.

4.) Make a well in the center of the flour mixture and pour the liquid in. Mix them together until there are no lumps.

5.) Heat a skillet over a medium heat. Add butter to pan, and use 1/4 cup measuring cup to add batter into the skillet. Spread the butter so that it makes a bigger pancake.

6.) The pancake is ready when the edges look dry and bubbles appear on top. This should take about 2 minutes. Flip the pancake and cook on the other side.

7.) Add peanut butter and homemade jam to the top, and enjoy. (Be sure to use peanut butter that is organic(when possible) and contains only two ingredients (salt and peanuts).

For the homemade ‘jam’.

This is recipe is so easy and takes no time to make. I usually start this while the pan is heating, and it is ready by the time all the pancakes are ready. You can store it in a glass container for up to a week.

2 cups frozen mixed berries (or frozen fruit of choice, you can do this with any frozen fruit, we just prefer mixed berries). I buy Costco’s organic mixed berries.

1/2 cup water

2 TBSP chia seeds

1/2 tsp tapioca flour + 1 tbsp water to thicken.

2 TBSP coconut sugar

1.) Add the frozen fruit in a sauce pan along with water, coconut sugar and chia seeds.

2.) Let the frozen fruit melt and use a potato masher and mash down the fruit. Try a tiny taste to see if you it’s sweet enough for you but be careful the fruit will be hot. If it isn’t sweet enough add extra coconut sugar and let it cook for another couple of minutes.

3.) Prepare your thickener by adding water and tapioca in a small bowl and mix. Pour it into the mixture once it has been removed from the heat and slightly cooled.
